  • 1 large globe eggplant
  • 2 tsp salt
  • 4 T olive oil (divided)
  • 2 tsp red apple vinegar
  • 2 tsp fresh lemon juice
  • 1 tsp garlic puree
  • 1 tsp Aleppo Pepper (adjust to taste)
  • Fresh parsley and mint for garnish

Instructions

  1. Slice the eggplant into uniform 3/4 inch thick rounds and sprinkle salt on both sides. Let drain for 40 minutes.
  2. In a bowl, whisk together 2 tablespoons of olive oil, vinegar, lemon juice, garlic puree, Aleppo Pepper, and optional Spike Seasoning.
  3. Preheat your grill to medium-high heat.
  4. Pat the eggplant dry and brush both sides with remaining olive oil.
  5. Grill eggplant slices for about 4–5 minutes on each side until charred and tender.
  6. Remove from grill, drizzle with marinade, and let sit for 10–15 minutes to absorb flavors.
