  • 1 cup homogenized milk
  • 3 tablespoons butter
  • 1 cup dark brown sugar
  • 2 eggs, room temperature
  • 2 cups unbleached all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 1 cup butter (for caramel sauce)
  • 2 cups brown sugar (for caramel sauce)
  • 1 cup 35% cream (for caramel sauce)
  • Sea salt flakes

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly butter an 11 x 8-inch glass or oven-safe casserole dish.
  2. In a small bowl, combine chopped dates with baking soda. Scald milk in a saucepan and pour over the dates. Set aside for about 15 minutes.
  3. In one bowl, mix flour, baking powder, and salt. In another bowl, beat eggs. Use a food processor to blend eggs, dark brown sugar, butter, and vanilla extract until smooth. Gradually add dry ingredients followed by the date mixture until well combined.
  4. Pour batter into the prepared dish and bake for about 30 minutes until golden and set in the center.
  5. For the caramel sauce, melt butter in a saucepan, stir in brown sugar and salt until dissolved. Gradually add cream while stirring; simmer for about 10 minutes until thickened.
  6. Poke holes in the baked pudding and pour one-third of the warm caramel sauce over it to soak. Let sit for 15 minutes before serving with more caramel sauce and whipped cream.
