  • ½ cup heavy whipping cream
  • 2 (8-ounce) blocks cream cheese (room temperature)
  • ⅓ cup granulated sugar
  • 2 teaspoons lemon juice
  • ½ teaspoon vanilla extract
  • 1 pound fresh strawberries (hulled and sliced)
  • 1 tablespoon red currant jam (or apricot, or strawberry)
  • ½ teaspoon water

Instructions

  1. Make the crust by pulsing flour, sugar, salt, and cold butter in a food processor until crumbly. Add ice water until combined.
  2. Chill the dough for at least 1 hour before rolling it out into a tart pan.
  3. Blind bake the crust at 400°F for about 25 minutes until golden brown.
  4. Prepare the filling by whipping together cream cheese, sugar, lemon juice, and vanilla until smooth.
  5. Spread the filling in the cooled crust and top with sliced strawberries. Brush with melted jam for shine.
