  • 3/4 cup light coconut milk
  • 1/2 cup sweet chili sauce
  • 1 lime
  • Salt and pepper

  • 1/4 cup fresh cilantro (chopped)

  4. In a skillet, melt coconut oil over medium heat and sauté cauliflower rice seasoned with salt and pepper until tender (about 5–7 minutes). Stir in remaining lime juice, coconut milk, and chopped cilantro.
