  • 2 Sweet Potatoes, quartered (1 pound each)
  • 1 Large Tart Apple, peeled and cored
  • 2 Tablespoons Olive Oil
  • 1 Onion, chopped
  • 2 Stalks Celery, chopped
  • 1 Large Carrot, chopped
  • 1 Bay Leaf
  • 5 Cups Chicken Broth
  • 1 Cup Cream
  • Zest and juice of 1 Lemon
  • Salt and Pepper (to taste)
  • 1 Cup Crumbled Goat Cheese or Feta Cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place sweet potatoes and apple on a greased baking sheet; roast for about 40 minutes until tender.
  3. Allow to cool slightly, then peel sweet potatoes.
  4. Heat olive oil in a soup pot over medium heat; sauté onion, celery, bay leaf, and carrot until tender.
  5. Remove bay leaf; add chicken broth along with roasted sweet potato and apple mixture.
  6. Blend until smooth using an immersion blender or regular blender.
  7. Return mixture to pot; stir in cream, lemon zest, and juice.
  8. Season with salt and pepper; warm gently without boiling.
  9. Serve garnished with crumbled cheese.
