  • 1 large tart apple, peeled and cored
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 stalks celery, chopped
  • 1 large carrot, chopped
  • 1 bay leaf
  • 5 cups chicken broth
  • 1 cup cream
  • Zest and juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the sweet potatoes and apple on a greased baking sheet; roast for about 40 minutes or until tender.
  3. Allow them to cool slightly before peeling the sweet potatoes.
  4. In a soup pot, heat olive oil over medium heat; sauté onion, celery, carrot, and bay leaf until tender.
  5. Remove the bay leaf; add chicken broth along with roasted sweet potato and apple.
  6. Blend until smooth using a regular blender or immersion blender.
  7. Return the mixture to the pot; stir in cream, lemon zest, and juice.
  8. Season with salt and pepper; gently warm without boiling.
  9. Serve hot with optional crumbled goat cheese on top.
