  • 4 portobello mushroom caps
  • 2 tbsp balsamic vinegar
  • 1 tbsp low sodium soy sauce
  • 1 tbsp olive oil
  • 1 tbsp chopped rosemary
  • 11/2 tsp steak seasoning like Montreal Steak Grill Mates
  • 4 thick slices red onion
  • 4 oz reduced fat Swiss cheese (sliced thin)
  • 4 thin slices tomato
  • 1/2 avocado (sliced thin)
  • Baby spinach
  • 4 whole wheat low calorie buns (I used Martin)
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. In a large bowl, whisk together balsamic vinegar, soy sauce, olive oil, rosemary, and steak seasoning.
  2. Marinate the portobello caps in the mixture for 20-30 minutes.
  3. Preheat the grill or indoor grill pan over medium heat and brush with oil.
  4. Grill the mushrooms for 5-7 minutes per side, basting with leftover marinade.
  5. Add Swiss cheese on top of the mushrooms during the last minute of grilling.
  6. Grill red onion slices for about one minute on each side and toast buns until golden.
  7. Assemble by placing spinach on each bun followed by grilled mushrooms, onions, tomato slices, and avocado.
