  • 1/4 cup fresh parsley (optional, chopped)
  • 1/3 cup red apple vinegar
  • Juice of 1 lemon
  • 1 tsp honey
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 2/3 cup extra-virgin olive oil

Instructions

  1. Cook the orzo according to package instructions until al dente. Drain and rinse under cold water; let cool completely.
  2. In a large mixing bowl, combine the cooled orzo, diced cucumber, crumbled feta cheese, halved cherry tomatoes, chopped red onion, basil leaves, and optional parsley. Mix gently until evenly combined.
  3. In a small bowl, whisk together the red apple vinegar, lemon juice, honey, salt, pepper, and olive oil until well blended.
