  • 1 ½2 cups cherry tomatoes
  • 23 ripe peaches
  • 1 cup pitted fresh cherries
  • 8 ounces burrata cheese
  • ¼ cup toasted pumpkin seeds
  • Fresh herbs (basil, oregano, dill, thyme)
  • Vinaigrette (extra virgin olive oil, balsamic vinegar, honey)

Instructions

  1. Prepare the vinaigrette: In a glass jar, mix olive oil, vinegar, honey, shallots, garlic, lemon zest, and chopped herbs. Whisk until smooth.
  2. Toss the salad: In a large bowl, combine halved cherry tomatoes, peach wedges, and pitted cherries. Drizzle with one-third of the vinaigrette and let sit for 15 minutes.
  3. Assemble: Before serving, break burrata over the salad and add remaining vinaigrette. Top with pumpkin seeds and garnish with parsley.
