  • 20 oz refrigerated cheese tortellini
  • 1 pint cherry tomatoes, halved
  • 1 cucumber, chopped
  • 1/2 red onion, thinly sliced
  • 1 cup kalamata olives, chopped
  • 1 cup fresh mozzarella balls
  • 1/2 cup salami or pepperoni, chopped
  • 2 cups baby spinach or arugula
  • Fresh basil for garnish
  • 1/2 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp honey
  • 1 clove garlic, minced
  • Dried oregano, salt, and pepper to taste

Instructions

  1. Cook tortellini according to package directions until al dente. Drain and rinse under cold water.
  2. In a jar, combine olive oil, vinegar, mustard, honey, garlic, oregano, salt, and pepper. Shake until emulsified.
  3. Toss warm tortellini with half the dressing and let cool for about 10 minutes.
  4. Add tomatoes, cucumber, onion, olives, mozzarella, salami or pepperoni, spinach or arugula. Pour remaining dressing over and mix well.
  5. Cover and refrigerate for at least two hours before serving. Toss again before serving.
