  • 1 1/2 cups fresh breadcrumbs
  • 1 cup finely minced onion
  • 10 cloves garlic, pressed
  • 2 tablespoons fresh sage, chopped
  • 1 3/4 cups chicken stock
  • 2 cups pumpkin puree
  • Olive oil for frying
  • 3/4 cup parmesan cheese, grated
  • 3 tablespoons milk
  • 1 tablespoon chopped fresh parsley
  • 1 1/2 teaspoons Italian seasoning
  • 1 large egg plus 1 yolk
  • 1 1/4 teaspoons salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons ghee or unsalted butter
  • 2 teaspoons Italian seasoning
  • 1/4 teaspoon black pepper
  • 1/4 cup heavy cream
  • 2 tablespoons maple syrup
  • 1 tablespoon chopped, fresh sage

Instructions

  1. In a large bowl, combine breadcrumbs and milk; let sit for 2-3 minutes.
  2. Add minced onion, garlic, sage, Italian seasoning, parmesan cheese, egg, salt, and pepper; mix well.
  3. Gently add ground turkey until combined but do not overmix.
  4. Form into meatballs using a 2-tablespoon scoop; chill for 20-25 minutes.
  5. Sear meatballs in olive oil over medium heat until browned; set aside.
  6. In the same skillet, sauté onion and garlic in ghee until softened.
  7. Whisk in pumpkin puree, chicken stock, salt, pepper; bring to simmer.
  8. Stir in parmesan cheese and heavy cream; add meatballs back to the sauce to warm through.
