  • 1 cup shortening (or cold butter)
  • 1 teaspoon kosher salt
  • 68 tablespoons ice cold water
  • 1/2 pound mushrooms, sliced
  • 2 tablespoons olive oil
  • 2 cups fresh baby spinach
  • 1 cup cooked turkey breast, diced or shredded
  • 6 large eggs
  • 3/4 cup 2% milk
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 2 teaspoons fresh thyme, stems removed
  • 1/2 teaspoon kosher salt (adjust to taste)
  • 1/2 teaspoon black pepper (adjust to taste)
  • 4 ounces cheddar cheese, shredded
  • 4 ounces Gruyère cheese, shredded

Instructions

  1. Make the crust by combining flour and salt with shortening until pea-sized crumbs form. Mix in ice-cold water to form dough. Chill for at least 30 minutes.
  2. Preheat oven to 425°F (220°C). Roll out the dough and place it in a pie dish. Blind bake for 20 minutes.
  3. Sauté mushrooms in olive oil until golden; add spinach until wilted.
  4. In a bowl, whisk eggs with milk and spices.
  5. Layer half of the cheese in the crust followed by turkey, mushrooms, spinach, and remaining cheese. Pour egg mixture over everything.
  6. Reduce oven temperature to 350°F (175°C) and bake for 35-45 minutes until set.
