  • 8 ounces feta cheese, cubed
  • 1/4 cup red wine vinegar

  • 1 tablespoon Dijon mustard
  • 1 tablespoon grated lemon zest
  • 1 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup finely chopped red onion
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Whisk together red wine vinegar, Dijon mustard, lemon zest, sugar, salt, and pepper in a small bowl. Gradually add olive oil while whisking until combined.
  2. In a large bowl, toss arugula with about 1/4 cup of the vinaigrette. Spread evenly on a large rectangular serving dish.
  3. For the flag design, place blueberries in the top left corner for stars and alternate rows of watermelon and feta cubes for stripes.
