- 1 large egg
- ½ cup freshly grated Parmesan
- ¼ cup cornstarch
- Salt and pepper to taste
- 2 tablespoons fresh churned garlic butter
- 1–2 cups shredded cheddar cheese
- Squeeze excess moisture from the grated zucchini using a cheesecloth or kitchen towel.
- In a mixing bowl, combine the squeezed zucchini with the egg, Parmesan, cornstarch, salt, and pepper until you achieve a dough-like consistency.
- Heat garlic butter in a skillet over medium heat.
- Shape the zucchini mixture into two patties and cook each for 3–4 minutes per side until golden brown and crispy.
- Place shredded cheddar cheese on one patty, top with the second patty, and cook for an additional 3 minutes until the cheese melts.
- Allow to cool slightly before slicing in half and serving warm.
