  • 2 cups grated zucchini
  • 1 large egg
  • ½ cup freshly grated Parmesan
  • ¼ cup cornstarch
  • Salt and pepper to taste
  • 2 tablespoons fresh churned garlic butter
  • 12 cups shredded cheddar cheese

Instructions

  1. Squeeze excess moisture from the grated zucchini using a cheesecloth or kitchen towel.
  2. In a mixing bowl, combine the squeezed zucchini with the egg, Parmesan, cornstarch, salt, and pepper until you achieve a dough-like consistency.
  3. Heat garlic butter in a skillet over medium heat.
  4. Shape the zucchini mixture into two patties and cook each for 3–4 minutes per side until golden brown and crispy.
  5. Place shredded cheddar cheese on one patty, top with the second patty, and cook for an additional 3 minutes until the cheese melts.
  6. Allow to cool slightly before slicing in half and serving warm.
