  • 4 medium Zucchini
  • 1 tbsp Olive oil
  • 1/4 tsp Sea salt
  • 1/4 tsp Black pepper
  • 16 tbsp Marinara sauce
  • 1/3 cup Mini pepperoni slices
  • 1 1/3 cup Mozzarella cheese
  • 2 tbsp fresh parsley, finely chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (204°C) and line a baking sheet with parchment paper.
  2. Slice zucchini lengthwise and scoop out centers to create wells.
  3. Place zucchini cut side up on the baking sheet, drizzle with olive oil, and sprinkle with salt and pepper.
  4. Roast for 15-20 minutes until tender. Pat dry to remove excess moisture.
  5. Fill each zucchini boat with marinara sauce, top with mozzarella cheese and mini pepperoni.
  6. Bake for an additional 5 minutes, then broil for 3-5 minutes until cheese is melted and browned.
